Almost four years ago I quit sugar. For years I have experimented with different types of corrections crave sugar and one of my favorites is coconut. Whether in the form of flakes, chips, oil, cream, milk or fresh, these beauties are brilliant when it comes to dealing with cravings.
Coconut oil is composed primarily of medium chain fatty acids (MCFAs), which produce a lot of health benefits. Are small enough to easily penetrate cell membranes do not require special enzymes to be broken down so easily digested, and they are immediately converted into energy rather than stored as fat.
Unlike the carbohydrates, coconut oil produces a peak of insulin into the bloodstream, preventing energy slumps feared. You get the maintenance energy, a feeling of fullness, and a sweet blow-no after effects. A stroke quad!
Major supermarkets have joined the bandwagon is now full of coconuts / green. You will recognize them by their white casing, not the hard brown shell of a mature coconut. Drink the juice and scrape the flesh with a spoon to use in smoothies and recipes.
Here are some great ideas for ways to use coconut to help kick the sugar habit today!
1. Having a glass of coconut water.
It is three times more hydrating than water and is an amazing electrolyte. Go fresh if possible, otherwise look for packaged versions that are organic, fair trade and have traveled less distance.
2. Add the coconut shakes.
Add a tablespoon of coconut oil to your favorite smoothie mixture, or replace regular milk with coconut water or milk. You can also add coconut meat to bulk mix things very well.
3. Eat one or two tablespoons of coconut oil directly from the bottle.
I do it almost every afternoon to help me through dinner, and to stop a sweet craving in its tracks.
4. toasted coconut flakes.
Toasted coconut flakes in a pan and sprinkle on top of your oatmeal or yogurt with some nuts and cinnamon.
5. Pan-fry some pieces of pumpkin in coconut oil.
Fresh pumpkin Sprinkle with salt to help soften the pumpkin, and add a little cinnamon. Just before serving, add some coconut flakes or shredded coconut until golden brown. A great little meal or snack on the go.
6. Make your own coconut ice cream!
Simply put a can of coconut cream (not milk and not a “light” version) in the refrigerator. It thickens to a smooth consistency frozen within a few hours. Yum.
7. Stew fruit in coconut milk
Or pour the coconut milk over fresh strawberries for an insta-dessert.
8. Make rice pudding with coconut milk.
Simply heat leftover rice (or quinoa or oatmeal) with a splash of coconut milk until creamy and sweet. Add the cinnamon and nuts.
9. Make your own coconut butter!
And eating straight from the fridge or spread on toast or pancakes.
