I was hooked on oats at night when my dear friend, Gena Hamshaw, author of the new book extraordinary vegan cooking, Choosing Raw, introduced me to one of their recipes. I do all kinds of variations on this particular case, by adding spirulina, coconut, carob, lucuma and almond butter. Whatever it is, and probably tastes great!
This here is my standard recipe for oatmeal favorite night – absolutely perfect for the sweltering heat of August, when the idea of making a hot stove does not sound at all appealing. Try experimenting with ingredients and change it to your liking!
The Ultimate August Breakfast
- 1/3 cup rolled oats
- 1/2 Tbsp. chia seeds
- 1/2 banana, mashed
- 1-2 Tbsp. chopped raw almonds
- 1-2 Tbsp. raisins
- Pinch ground cinnamon
- Pinch ground ginger
- Pinch salt
- ½ cup almond milk
- Optional: Extra almond milk, raw nuts, berries, sliced banana, dried fruit, or nut butter to garnish, if desired

Mash the banana with a fork in a mason jar or container with a seal so you can refrigerate overnight.
Add all dry ingredients and mix.
Add the almond milk and stir until well blended.
Cover and refrigerate overnight.
In the morning, remove from refrigerator and stir, add more milk if desired.
Above all to taste and enjoy!
